TL;DR
You can pay the overstay fine directly at Cairo airport before departure — often a reduced amount or nothing at all; document copies aren't always required, but with a serious overstay you may be held until you buy a ticket.
Personal account: flew from Sharm el-Sheikh to Cairo, then from Cairo onward to Alexandria (the final exit point from Egypt). Documents were checked multiple times, and the traveler was ready to buy a ticket on the spot, but no overstay fine was charged at all.
Departing from Cairo, officials often don't charge the overstay fine at all, or charge only a minimal amount — unlike in other Egyptian cities.
Paying the fine doesn't guarantee a smooth departure: if the overstay is too long, you may be detained until you buy a ticket and released only a couple of hours before the flight.
You can't legally live in Egypt indefinitely by just paying periodic fines — a long overstay restricts travel within the country, so it's best to renew your visa on time.
The exact overstay fine calculation is posted in the group's pinned message, but in Cairo specifically they may waive it or charge less — never more than the stated maximum.
