TL;DR
Dahab has few all-inclusive hotels and they're not high quality — for that style of vacation, Sharm el-Sheikh is better. Dahab mostly has cheap hotels without meals, where you just sleep and spend time at beachfront cafes instead.
Additional review of a large all-inclusive resort in Dahab (likely Majestic, has aqua park): room cleaning is mediocre, and the sea is far — a shuttle bus runs roughly once an hour; return buses are overcrowded and often late, meaning waits in the heat with kids. The hotel's own beach is small but fine for a family stay. Walking about 15 minutes to the right from the beach lets you see marine life (wear water shoes for safety). Russian-speaking staff available. Recommends buying excursions through a guide named Tito based at the dive club on the hotel grounds — much cheaper than elsewhere, speaks Russian, and personally took them to Old Town. Food is decent but simple; when checking in, ask for a room near reception rather than near the aqua park, since walking far with kids in the heat is a hassle. All pools are open with great water temperature, two free poolside bars operate roughly 16:00–18:00.
Majestic hotel in Dahab: large grounds, many pools, water park shared with neighboring hotels, fresh juices, good food, foam parties and lively pool/bar scene, spacious rooms. Downsides: no robes or slippers provided, and a very long, shallow sea entry — not great if you want to swim in the actual sea.
When booking a 'garden view' room in Egypt, don't expect an actual garden — it's often just a view of the road between hotel buildings, and there's no formal basis to complain.
A small hotel in Dahab with good food (comparable to good 5-star Turkish resorts), minimal entertainment, live music in the evenings, and local alcohol — good option for a quiet adult-oriented stay. The sea is good for swimming and snorkeling, with chances to see fish and turtles.
Dahab has two main hotel types: 1) all-inclusive resorts with private grounds and beach access, but there are few of them and quality is not high (for this style, Sharm el-Sheikh is a better choice); 2) cheap regular hotels without meals, which are much more common — you just sleep there and spend most time at beachfront cafes or doing sports instead of lounging on a beach.
