TL;DR
Mixed reviews: adults-only (18+) resorts are quieter without kids' noise, but have smaller grounds and fewer pools, plus crowded evening bars. Some families staying at family resorts like Seagate actually go to the neighboring 18+ resort for the beach and after-4pm parties.
If you don't drink alcohol, the 18+ zone isn't worth it — you mainly pay for pool access that's available in the regular zone anyway.
One traveler disliked the 18+ resort: smaller grounds and fewer pools than the family resort, crowded pool bar — quieter people found Seagate more comfortable.
Another traveler does the opposite — leaves Seagate for the whole day to visit a neighboring 18+ resort in Sharm el Sheikh: it has an adult beach with umbrellas, a short but decent pier, and good parties after 4pm, versus crowds of kids and noise at Seagate, where many local families with 3-5 children stay.
