TL;DR
Euros are widely accepted in Hurghada, but 500-euro notes are often refused, and there's now a markup on 'new' euro banknotes (just like dollars) — older worn notes don't have the markup but are harder to come by.
500-euro notes are hard to exchange — some exchange points simply refuse them, so it's better to bring smaller denominations.
A markup now applies when exchanging crisp 'new' euro bills, same as with US dollars. Older, worn notes exchange without the markup, but they're hard to get unless you're lucky enough to receive them as change from someone.
At a currency exchange machine, inserting a euro note and selecting euro on screen sometimes results in the machine 'thinking' for a moment and then rejecting the note without completing the exchange.
