TL;DR
Activate your eSIM at your departure airport so it works immediately upon arrival in Egypt. Switch cellular data to the eSIM only on the plane or after landing.
If this is a one-time trip with your phone, it's better to get a local physical SIM instead of an eSIM. If buying it at the airport, make sure it's installed and activated in front of you, and check the balance right away — or get it at any phone/communication shop.
If your phone doesn't support eSIM, you can get a physical SIM card from the M8 operator for Egypt.
Activate the eSIM at home while you have internet access — Hurghada airport has no Wi-Fi for foreign SIMs. After landing, disable your main SIM, enable roaming, and switch to the eSIM.
If your next trip to Egypt is within a year, you can reuse the same eSIM — no need to buy a new one.
To switch to your eSIM, go to your phone's settings and change the cellular data source from your main SIM to the eSIM.
