How good is the food at all-inclusive resorts in Sharm El Sheikh, and are there specialty restaurants besides the main buffet?

TL;DR
Most all-inclusive resorts offer a varied buffet (fish, beef, chicken, pasta, rice, pastries) with huge portions, but quality can vary between hotels and even year to year — some guests report a drop in food quality compared to previous seasons.
Another report of inconsistent food quality: breakfasts were fine (porridge, yogurt, croissants, cream cheese), but lunch was poor two days in a row, and dinner mostly featured various types of pasta (seemingly leftovers), with no shrimp at all. Vegetables were half-raw or oddly stewed cabbage; a saving grace was shawarma-style wraps served in hot dog buns.
Feedback on the 'Yumi' à la carte restaurant: a long wait for the kid's fries with chicken (despite asking for it to be served first), while soups and salads came quickly. Rolls are served as a fixed mix with no choice, and were mediocre. The menu also includes sashimi and onigiri, but these weren't offered proactively — the manager initially claimed they weren't ordered, then brought them anyway after the guests were already full.
Regarding specialty restaurants: the Italian one only serves breakfast and lunch. In the evening you must book an à la carte slot, with two paid options — a fish restaurant and one called 'Mayak' (Lighthouse).
One guest compared hotels and moved to Robb — reporting noticeably better food, a lush green property, and half the price; Rif hotel was also praised as a solid alternative.
On dinner offerings: they served battered fish as well as shrimp with crab and vegetables — one guest noted she was too full from breakfast and beach time to eat much at dinner.
One traveler asked if there are dining options besides the main buffet, since breakfast and lunch felt lower quality than a hotel she stayed at the previous year — food quality can vary a lot between resorts.
Portions at the hotel restaurant are very generous — guests reported leaving completely full, and enjoyed the overall dining atmosphere.
In late June, a large share of guests at the main hotel restaurant were on a Fun & Sun package tour; there was still plenty of food for everyone, with a wide selection of fish, beef, chicken, pasta, rice, and pastries.
