Where can I buy a local SIM card or eSIM in Sharm El Sheikh for mobile data and calls abroad?

TL;DR
For data, buy an eSIM before travel or get a local Vodafone, Orange, Etisalat, or WE SIM at Sharm El Sheikh Airport or an official shop. Calls to Russia are usually cheaper through WhatsApp, Telegram, or another internet calling app than through international voice tariffs.
An eSIM usually does not come with an Egyptian phone number because it is commonly a data-only package. You can keep your home number for app registration, while calls and messages work over mobile data unless the eSIM specifically includes a local number.
If you specifically need an Egyptian number, buy a physical SIM from an official Vodafone Egypt, Orange Egypt, Etisalat by e&, or WE outlet. Use an official airport counter or carrier shop and bring your passport rather than buying from an informal reseller.
For staying in touch with Russia, install WhatsApp or Telegram before departure and use a data package: roaming on a home SIM may be unavailable or expensive. Download the apps before flying so you are not dependent on airport connectivity.
