TL;DR
For 2 weeks, a solid plan is 4 nights in Ubud, the rest at Melasti Beach with a 1-night trip to Nusa Penida. Save Gili Islands and Java for a future trip.
A 2-week Bali trip works well as 4 nights in Ubud followed by the rest at Melasti Beach, with a 1-night side trip to Nusa Penida without checking out. Trying to see everything at once isn't worth it — Bali rewards repeat visits.
The Gili Islands need dedicated days and don't fit well into a tight 2-week itinerary. Better to save them for a 3-week trip, potentially combining with remote work.
With 3 weeks you can build a richer itinerary: one week on Gili (great for remote work), then beach time based at Melasti, revisit favourite Ubud hotels, stay at the InterContinental, and possibly add Amed.
With 20–25 days and a desire to go beyond Bali, a trip to Java to see the Ijen volcano crater is highly recommended — one of the most spectacular natural sights in the region.
