At one local restaurant travelers who were previously skeptical about raw fish ended up loving the sashimi.

Tuna is mediocre in most places, so snapper is a better bet — it turns out juicy and flavorful.

Octopus is also delicious but tricky to cook — it's easy to overdo if you don't know the technique.
