Do I need an onward ticket to fly to Antalya, and can I book a return flight 90 days later?

TL;DR
It is best to carry a return or onward ticket dated within your permitted stay, as the airline at check-in or border officers may ask for it. A day-90 return works only if your nationality allows up to 90 days in Turkey within a 180-day period; a visa run does not automatically reset the allowance.
For a Moscow–Istanbul flight, keep a downloadable return or onward booking ready: the airline may request it at check-in, not only Turkish immigration. The booking should show departure within your permitted stay.
If you expect extra document checks before an international flight, arrive earlier than the standard two hours. This leaves time to show your itinerary, intended length of stay and ticket out of Turkey.
For a 90-day Moscow–Antalya trip, booking the return around day 90 is sensible only after checking the 90/180 rule for your passport. Do not assume that a short exit and re-entry will automatically add another 30 days.
