Some try changing the birth date in their phone and showing a photo (not the original) of their passport at check-in, but this is a risky and not recommended trick.
If a hotel refuses due to age, try renting an apartment instead — landlords tend to be more lenient about guests' age than hotels.
Stay one night wherever you currently are, then the next day walk around in person to check different hotels — Istanbul has an enormous number of them.
