TL;DR
Plan at least 3 days in Istanbul. Visit Topkapi Palace early in the morning and allow half a day. The Fatih mosque district deserves its own day. Skip group tours — explore independently to soak up the atmosphere.
Istanbul's new airport (IST) is far from the city center with little nearby to visit. For a 5-hour layover, it's best to stay inside — the terminal has cafes, shops, and rest areas.
Istanbul is best explored independently without guided tours. A minimum of 3 days lets you wander the backstreets, sit in local cafes, and truly absorb the city's atmosphere.
Topkapi Palace requires at least half a day — the grounds are vast and involve a lot of walking. Go first thing in the morning to beat the crowds and see everything comfortably.
The mosques of the Fatih district deserve a full dedicated day. This historic neighborhood is packed with Ottoman mosques, quiet streets, and authentic local life away from the main tourist trail.
