TL;DR
Best swimming season is October–December. Late May through mid-September is too hot (off-season), and by January the sea turns cold and windy.
In late June, Saadiyat is still comfortable for swimming, especially after 4 pm through sunset. But within 2–3 weeks the extreme heat usually sets in: the sea becomes too warm, and by August beach time is very uncomfortable.
If choosing between autumn and spring, late September to October is considered noticeably better for long swims than mid-March: in March the water still feels cool, making extended swimming less comfortable.
In late June the sea at Saadiyat is warm but full of seaweed and sea urchins — when it's windy the urchins become invisible underfoot, making swimming uncomfortable. The stretch near Centara (left of Rio) tends to be cleaner. For comparison, the sea at Radisson Ras Al Khaimah in October was noticeably better.
In September Saadiyat beach has persistent waves. Locals say calm, wave-free conditions only start from October onwards.
Saadiyat's biggest draw is the quality of the sea itself. However, visiting before October is not recommended — by late May the heat makes it off-season, lasting at least until mid-September. The sweet spot is October, November, and early December. By mid-January the water turns cold and conditions become windy.
