TL;DR
Fairmont has the edge on dining: more restaurant options for breakfast, lunch and dinner, and both restaurants open simultaneously during busy periods. Saray is comparable but offers less variety.
For one of the hotels (described as new, likely Saray): ultra all-inclusive concept with a wide alcohol selection, several whisky types, cocktails from morning at pool and sea bars, evening lobby cafe.
Review of the newer hotel: main restaurant is nice, food is good daily with a wider selection on weekends. Weekdays also have plenty of food, including at pool bars. Downside — some miss more evening entertainment, though there is daytime/evening music; concept expansion promised from September.
Fairmont edges out Saray on dining: more restaurant options covering breakfast, lunch and dinner. On busy weekends both restaurants open simultaneously to handle the crowd, so there's no waiting.
Fairmont's lobby makes a stronger impression with a striking chandelier, plush armchairs and deep-pile carpet — this sets the tone for the overall dining experience at the hotel.
Both hotels offer equally premium in-room toiletries — Byredo and La Labo brands. Pool facilities are also considered roughly equivalent between the two.
Worth noting for beach access: both hotels experience low tide, but at Fairmont the sea returns faster and reaches greater depth — relevant if swimming is a priority.
