TL;DR
Fresh fruit at good prices is found at a hidden morning market (open 6:00–9:30am, in a narrow side street, next to a small Vinmart) and at the night market near Dragon Bridge; street stalls near hotels usually only sell pre-cut/peeled fruit.
The night market near Dragon Bridge also has fruit sellers and woven baskets for shopping, worth checking in the evening.
In the Doc Let area there are few fruit stalls or grocery shops — better to stock up before moving there for the last days of the trip.
Regular street stalls near hotels rarely sell whole fresh fruit — mostly it's already peeled and cut.
Street coconuts cost around 20,000–25,000 VND (some found them for 15,000), while pre-cut fruit in supermarkets is noticeably pricier than at markets or in Nha Trang. There are several currency exchange points in the area, and banks also exchange money with a passport.
