TL;DR
Skip the seafood sold by beach vendors (lobster can sit out in the heat for hours) — buy snacks at a store instead or head to the Sailing Club beach bar. For drinks, Heineken, Bivina and Dalat white wine get good reviews, while Saigon beer is less popular.
Beach vendors sell lobster that was boiled in the morning and sits out in the heat all day before being reheated on coals in front of you — risky to eat. Better to buy snacks at a store or head to the Sailing Club beach bar (has food and drinks, though pricier).
Saigon beer isn't a favorite — many find the taste off. Heineken is bought by the case at wholesale shops, while local brands Bivina and Larue ("Leshego") get good marks for taste.
During the day, Dalat white wine is a popular choice; in the evening it's wine, Margarita or passion-fruit mojito, sometimes craft beer if you can find it. Bloody Mary isn't common in Nha Trang, but a few burger spots make a decent version.
