TL;DR
It's hot outside, but bring a light jacket for heavily air-conditioned restaurants and for the summit of Mount Sinai before sunrise. Wind can be an issue, especially in winter.
In January, expect roughly 25 °C during the day, around 17 °C in the evening, and sea temperature near 23 °C. A windbreaker or sweatshirt is useful after sunset even if daytime feels comfortable.
After swimming, especially in the morning, you may want to wrap up right away: the wind can be strong even if it is not actually cold. A robe is not essential for a child, but it can be more convenient than just a towel for early beach time.
Wind conditions can change unpredictably خلال the day: it may be breezy in the morning and calmer after lunch, or the opposite. It is worth having a light extra layer for shifting conditions.
