What's the food quality like at Hurghada all-inclusive resorts?

TL;DR
Most Hurghada all-inclusive hotels serve tasty, varied meat, chicken and seafood (shrimp, salmon), but fresh fruit selection is often weak - watermelon and melon can be missing for months, replaced by dates and oranges.
The reef near the pontoon is lively and decent. Breakfast includes fresh fish and freshly baked croissants - very tasty. Dinner featured very tender lamb. Cocktails were poor quality, bottled beer was okay but slightly bitter.
The dessert display can run out early during dinner - with 1.5 hours left before dinner ends, the sweets counter was already empty except for a few unappetizing pastries.
Contrary to complaints about no mango, at another dinner mango was freshly cut outdoors right until the end of service, with each guest given a whole fruit - very tasty.
Over 10 days, shrimp was served 3 times; no salted salmon at breakfast but baked salmon steaks at dinner. Plenty of beef dishes, well prepared. Ice cream is good - scooped from tubs, not machine-made. Downsides: mango was out of season (late May-early June) and watermelon was missing too, even though other hotels had it at that time. Overall food rating lowered to 5- due to poor fruit selection and mediocre desserts.
Dinner at the resort included mussels and grilled salmon, plus yellow-fleshed watermelon for dessert.
Chose the hotel based on food photos in reviews and wasn't disappointed - meat, chicken and desserts come in a wide variety. Fruit selection is weak though: only flavorless dates and sliced orange, no watermelon or melon on the buffet.
