TL;DR
You need Turkish border insurance covering both drivers, purchased BEFORE crossing (buying it after the border costs 2x more), plus the second driver's license and vehicle registration; if spouses have different surnames, bring a notarized Turkish translation of the marriage certificate.
If the car is registered to someone other than either spouse (e.g., an adult son) who isn't traveling with you, the driver needs a general power of attorney explicitly granting the right to take the vehicle abroad. Also carry the vehicle registration and driver's license.
Buy the border insurance for both drivers before crossing into Turkey — doing it after entry doubles the price. Besides the vehicle registration (СТС), you'll need the second driver's license too.
If spouses have different surnames on their licenses, bring the marriage certificate translated into Turkish and notarized. Taking turns driving is legally fine only while you're a non-resident (under 180 days in Turkey) — in practice people do it at their own risk, ideally with the car owner also present in the vehicle.
Under Turkish rules, whoever drives across the border is treated as the car's owner in Turkey — decide in advance who will be the one driving at entry.
Extra requirements only kick in if you plan to actually reside in Turkey long-term with the car; for a regular entry/exit without residency there's no real difference.
