TL;DR
Central Goreme is very convenient — close to the bus station, ATMs, and everything you need within walking distance — but pool sunbeds at centrally located hotels fill up by 8am. Hotels on the edge of town are quieter with easier access to sunbeds.

Sunbed availability depends on the hotel's location: hotels off the beaten path rarely have crowding issues, but at centrally located hotels almost all sunbeds are taken by 8am.

Some hotels in the newer part of town have a small playground for kids, located just outside the lobby — cross the road and turn right.
