For everyday spending in Dubai, use UAE dirhams (AED): some tourist shops may accept US dollars, but usually at a poor rate. Airport exchange counters are convenient for a small arrival amount; exchange the rest at city branches such as Al Ansari Exchange.
US dollars are not standard payment currency in Dubai: supermarkets, cafés, taxis and most shops charge in AED or accept cards. A tourist-oriented shop may take USD, but it sets its own exchange rate, which is usually worse than the market rate.
There is no need to buy a large amount of dirhams in advance: keep a small amount of AED for initial expenses and exchange US dollars as needed. This reduces the risk of converting unused AED back at a less favourable rate.
You can exchange USD and AED both ways at Dubai Airport, but it is mainly a convenience option after arrival because rates are commonly less favourable. For the main amount, compare rates at city exchange houses such as Al Ansari Exchange.
