TL;DR
Half board in Dubai hotels typically covers breakfast (buffet), lunch and dinner from a set menu with a choice of dishes, plus a soft drink. Snacks during the day are not included — ordering them separately may forfeit your dinner.
At some Rove hotels, HB breakfast may include more than just the buffet: you can also choose one made-to-order hot dish from the menu, such as an omelet or eggs Benedict.
With half board, drinks from hotel bars during the day are generally not included. Included drinks mentioned were only in the restaurant during main meals: tea/coffee and juices at breakfast, and sometimes self-service tea/coffee at dinner.
Important note: snacks between meals are not covered by half board. If you order snacks separately during the day, you may be denied entry to the included dinner.
Buffet is available for breakfast only. Lunch and dinner are served from a fixed menu where you choose 4 dishes. The menu is shown at the restaurant. One soft drink of your choice is included with each meal.
