TL;DR
À la carte restaurants at the hotel are paid separately. The all-inclusive package covers dinner at one main restaurant only; lunches can be added for AED 115. Most menu items are included, except Australian beef fillet and a seafood dish.
At Sofitel, the 2 à la carte restaurants are not covered by the Ultra All Inclusive package and are paid separately. There's a set menu option, or guests can order from the main menu up to a 150 AED credit per person, with anything above that charged extra.
Upgrading to UAL (Ultra All Inclusive) unlocks 12 à la carte restaurants in addition to the main buffet restaurant. Service and presentation quality is much higher, but each restaurant offers a reduced menu, with some dishes still paid extra.
The main restaurant's à la carte menu is almost entirely covered by the all-inclusive package — only two items are excluded: Australian beef fillet and a seafood dish, which are charged separately.
