Ask for Tax Free at the cashier when paying. The shop should enter your passport details in its electronic system and issue a special refund receipt.

The Tax Free paperwork is issued by the shop, not by the airport, and only participating retailers provide it. The airport counter processes the refund using the documents from the store; participating shops are relatively limited.
