A regular physical SIM can be bought right at the airport: an unlimited plan costs about 380,000 VND. In town, SIM cards start at roughly 150,000 VND; the airport also has multiple plan options.
If your phone doesn't support eSIM, you can go to any local shop that sells excursions/tours — they'll sell you a regular physical SIM card and set it up on your phone right there.
