TL;DR
At most terminals in Nha Trang you insert (chip) the card rather than tap, then enter your PIN, and sometimes sign as well. If the terminal keeps saying "wrong PIN", try changing your PIN via your bank's app before the trip — this often fixes it. Some small local eateries only accept cash or a payment code, not cards.
One traveler had a terminal repeatedly reject a PIN as "incorrect" even though it was verified correct before the trip. Changing the PIN through the bank's mobile app fixed the issue immediately and card payments started working normally.
The local eatery "O, pelmeshki" doesn't accept card payments — only cash or a payment code (QR/number-based transfer). A traveler tried paying via a banking app code several times without success and had to find cash instead.
At Vinpearl amusement park, cards must be inserted chip-first into the terminal rather than tapped contactlessly. After that you enter your PIN, and sometimes you're also asked to sign — for example when buying fast passes through the park's app.
