TL;DR
Beach theft does happen: locals scope out unattended phones and belongings while tourists swim and grab them quickly. Best practice is to leave valuables at your hotel, bring only small cash for water, and have someone watch your things or take turns swimming.
Don't bring your phone or valuables to the beach — just a little cash for buying water. If you're with someone, take turns swimming so one person stays with the bags, or ask beach neighbors to keep an eye on your stuff.
A couple left their phones on the beach near AiResort and went for a swim — when they came back, the phones were gone.
There's also a counter-experience: a Nha Trang resident says they intentionally left a phone on the beach for half an hour as a test and nobody took it — comparing it to leaving valuables unattended in the Moscow metro.
