TL;DR
Bring only essentials to the beach: phone in a waterproof case and a small amount of cash. Leave documents and bank cards at the hotel.
Buy a combination padlock and lock your suitcase in the hotel room — nobody will get into it. Keep valuables you need with you in a waist/belt bag that stays on you at all times. Cash is rarely needed in Nha Trang — cards or QR payments work almost everywhere, except for sun lounger rentals.
Bring an old spare phone from home with no banking apps installed, and take that one to the beach instead of your main phone — no big loss if it gets stolen.
Don't be afraid to leave documents and cash in the hotel room safe: staff can technically open it, but actually stealing from a safe is a rare exception in a decent hotel and far more obviously incriminating than swiping items left in plain sight.
Get a waterproof phone pouch and keep your phone with you while swimming. Bring only your phone and a small amount of cash — no bank cards or documents.
Over three trips to Nha Trang, nothing was stolen — using paid sun loungers and bringing only a phone and minimal cash. Having other tourists nearby also helps.
Leave your phone and bank cards at the hotel. Bring only small change in an eyeglass case, and put everything in a clear plastic bag so it's obvious there's nothing valuable inside.
