Yes, reef shoes are recommended — sea entry in Sharm El Sheikh is mostly rocky/coral, not sandy, and they protect your feet and make it easier to climb back onto the pontoon.
Weather and sea conditions can be hit or miss — some travelers get perfect conditions even in February or April, others hit sandstorms during peak season. Compared to Dahab, Sharm generally has better fish and coral right by the hotels.
In most hotels the sea entry point itself is sandy, but reef shoes still make getting in and out a bit more comfortable — though you can manage without them too.
It's worth bringing reef shoes: without them it's uncomfortable to walk from the pontoon to your sunbed across hot sand, and they make swimming more comfortable too — fish can nibble at bare toes.
