TL;DR
Most ultra all-inclusive resorts in Turkey keep at least one bar (lounge or lobby) and a 24h backup restaurant open at night, but alcohol isn't always poured — it depends on which bar is on shift and whether there's a power outage.
The lounge bar stays open all night until 5am. The lobby bar opens at 8am (morning champagne not guaranteed). The main restaurant bar opens from lunchtime, champagne availability also varies.
Some resorts run a truly 24/7 ultra all-inclusive setup: when the main restaurants close, a 'night' backup restaurant opens (it actually operates during the day too, between meal times), serving fresh hot food at any hour — no need to order packed lunches.
Draft beer and soft drinks (cola, Fanta) are only poured during pool bar operating hours; during lunch and dinner the taps pause. Local power outages also stop the taps since they run on electricity.
The in-room minibar is restocked with drinks and beer daily, not just on check-in day, despite outdated info on the hotel's website.
The central bar closes at midnight, the disco (with alcohol) runs until 2am, and the mini-restaurant stays open all night — possibly also serving alcohol later on.
The bar near the bus stop operates all day until evening, and during certain hours an extra fast-food zone opens next to it.
