TL;DR
A Mount Sinai trip from Sharm el-Sheikh takes roughly a full day/night. Even in summer the summit is cold at night, so bring warm layers, water, and a flashlight.
A recent visitor just returned from the excursion and was very impressed — the sunrise from the summit was the highlight.
Tours from Sharm el-Sheikh typically depart at night, the ascent takes 2–3 hours, you watch the sunrise at the top, then descend and return to the hotel by morning — around 10–12 hours total.
In July and August the summit temperature drops sharply at night — it can be as low as 5–10°C even in summer. A warm jacket or fleece is essential.
Bring a flashlight or headlamp — the ascent is in complete darkness and the trail has no lighting. Spare batteries are a good idea.
Bring at least 1.5–2 litres of water per person. There are a few stalls on the trail selling drinks, but prices are very high.
Light snacks are enough — nuts, energy bars, dried fruit, sandwiches. Heavy food is awkward to carry and appetite is usually low during the climb.
Wear comfortable closed-toe shoes — trainers or hiking boots. Flip-flops are completely unsuitable as the trail is rocky.
