TL;DR
Most all-inclusive resorts in Turkey serve alcohol only during set windows (e.g. 10am-12pm, 3-7pm, and after dinner until 11pm); in between you can usually only get beer and wine. Bars close and music stops at 11pm.
Even at an all-inclusive resort, beer can run out (staff bring a new keg, but it goes fast too). Local raki bought in a shop costs around 825 lira per 0.35 liter.
Typical all-inclusive bar schedule: from 10am until lunch only wine and beer are served (no cocktails), it reopens after lunch until dinner, then drinks are served again until 11pm when music stops and bars close for the night.
At some resorts, mixed drinks like whiskey-cola are only served during narrow windows: 7-10am, 12-3pm, and 7-9pm — outside those hours they won't pour them.
