TL;DR
Cocktails at resort hotel bars tend to be very strong and overly sweet from added syrup — ask for spirits and mixer (like tonic or Schweppes) served separately rather than pre-mixed.
Margarita and pina colada were favorites; ask for the pina colada without rum, just with liqueur, and it comes out almost like a milkshake.
The cocktail selection is limited: bartenders make them well, but only from a specific short list rather than anything you might ask for.
One bartender (a young, round-faced guy) at the reception bar made especially good cocktails — worth asking for him specifically.
Ready-made cocktails at the bar tend to be too strong and overly sweet, with lots of syrup added. After a couple of days it worked better to ask for gin and Schweppes separately (for a gin & tonic) or the rum and mint mix separately (for a mojito), instead of the pre-made version.
No printed cocktail menu with photos was found — better to ask the bartender directly what's available.
